Born out of our experimental Projects Program, Ginger Beer Cask returns and it’s ready to drink your way. For our sixth batched release our distillers took our Melbourne-made and juicy single malt whisky and finished it in casks that held our distillery brewed ginger beer. Loaded with ginger and citrus peel, it leads with fire and spice.
Aromatically you’re hit with dark chocolate and orange.
The influence of both the Apera (fortified wine) and red wine barrel maturation shines through. We’ve been left with a truly unique expression of Ginger Beer Cask, unlike any that have gone before.

A zesty little number.
We start by brewing a fiery ginger beer in French and American oak barrels, at home in our Port Melbourne distillery. We load our recipe up with zesty citrus peel and fresh ginger for the best kind of zing and zip. Once the barrel staves soak in this spicy goodness, it’s time to add our whisky.

We fill the barrels with a union of Apera and red wine barrel aged single malt whiskies and after six months of ageing in our beer barrels, Ginger Beer Cask #6 becomes a zesty little number.
