Millie Tang is a bartender and freelance creative from Brisbane, Australia.

Her hobbies include making cocktails, drinking cocktails and shooting cocktails.
Besides the cocktail complex she is also the current Licor 43 Bartenders & Baristas global champion, Speed Rack Australia winner and ALIA Bartender of the Year.
 
Her usual haunt is the Gresham in Brisbane, however due to the closure of bars, she has pivoted to full time freelance work until restrictions ease and bars are open again. 


Coffee Maple Old Fashioned

Ingredients

50ml Coffee rested Starward Nova 
5-10ml Maple syrup
2 Sashes Angostura bitters

Method

Drink
1. Add ingredients to a glass and stir down with ice. 
2. Strain over block ice in a short glass and garnish with coffee beans or orange peel.

Rested Coffee
1. Add 15-20 coffee beans to 100ml of Starward Nova.
2. Rest at room temperature overnight (12 hours or so)


Grapefruit Honey Cooler

Ingredients

40mls Starward Nova
40mls Grapefruit juice
10mls Honey
1 dash Orange bitters
Soda to top

Method

Add all ingredients except soda to a shaker. Make sure to stir well before shaking to make sure honey is broken up and mixed through. Shake with ice. Strain into glass and add soda [approx 40mls]. Fill with ice and garnish with grapefruit slices.


Citrus & Rosemary Highball

Ingredients

40ml Starward Two Fold
3 dashes orange bitters
Lemon slices & rosemary sprig
Soda to top

Method

Add all ingredients into a tall glass and fill with ice, add lemon slices and top with soda. Garnish with rosemary sprig. Enjoy


Ginger Marmalade Sour

Ingredients

45ml Starward Nova
20ml Lemon juice
Spoonful ginger marmalade
10ml Sugar syrup 
1 dash Angostura bitters
10ml - 15ml Aquafaba

Method

Shake all ingredients in a shaker without ice to whip, add ice and shake again.
Strain over ice in a short glass and garnish with an orange slice and cherry garnish.


Two-Fold with plum & honey soda

Ingredients

Plum & Honey Soda
3 plums [tinned]
80ml plum juice [from the tin]
30ml lemon juice
20ml-30ml honey
Crack of salt
600ml water

Drink
30ml Starward Two Fold 
10ml Fino sherry (optional)
 

Method

Plum and Honey Soda
Either add ingredients to hot boiled water or heat altogether over stove but do not boil. Once hot, give a quick stir to ensure salt and honey mixes in, remove from heat and let stand. Once cooled, strain off plum solids, carbonate and refrigerate.

Don't be scared to tweak the soda recipe! Add different fruit, more fruit or a different sweetener.

Combine your new soda and drink in a tall glass with ice, garnish with lemon.


Two-Fold Mint Buck

Ingredients

40ml Starward Two Fold
20ml Lemon juice
10ml Sugar syrup
Small handful of mint
Ginger beer to top

Method

Add all ingredients except Ginger Beer to tall glass. 
Press mint gently in bottoms of glass and fill with ice. 
Top with ginger beer and give a brief stir to mix ingredients through. 
Garnish with mint sprig and eco straw.


Honey Espresso Martini

Ingredients

45ml Starward Nova
15ml Honey water [2:1 - honey:water]
30ml Espresso

Method

Pour 45mL of Starward Nova, 15mL of honey water (diluted to two parts honey, one part water) and 30mL of espresso to cocktail shaker.
Add ice & shake.
Strain into glass.
Get delightfully caffeinated. end of.


Two-Fold & Agave Collins

Ingredients

40ml Starward Two Fold 
15ml Lemon juice
10ml Agave syrup
Lemon and orange slices
Top with soda 

Method

Start by pouring 40mL of Starward TwoFold into a highball glass, followed by 15mL of Lemon Juice and 10mL of Agave Syrup (or Honey).
Thinly slice an orange and place a few slices inside your glass
Add ice and top with soda water
Stir and enjoy!
